INGREDIENTS (SERVES 4):
6 bone-in, skin-on chicken thighs (or boneless if preferred)
3 tbsp butter, divided
1 tbsp olive oil
4 cloves garlic, minced
1 tsp paprika
1 tsp dried thyme (or rosemary)
½ tsp salt (or to taste)
½ tsp black pepper
¼ tsp red pepper flakes(optional)
2 tbsp fresh parsley, chopped (for garnish)
Lemon wedges (optional, for serving)
INSTRUCTIONS:
Prep Chicken:
Pat thighs dry with paper towels (for crispier skin).
Season both sides with salt, pepper, paprika, and thyme.
Sear Until Crispy:
Heat olive oil + 1 tbsp butter in a large skillet over medium-high heat.
Place thighs skin-side down and cook 6-8 mins undisturbed until golden. Flip and cook 5-6 minsmore. Transfer to a plate.
Make Garlic Butter Sauce:
Reduce heat to medium, melt remaining 2 tbsp butter.
Add garlic and sauté 30 secs until fragrant (don’t burn!).
Optional: Stir in red pepper flakes or a splash of lemon juice.
Finish & Serve:
Return chicken to skillet, spoon garlic butter over it.
Garnish with parsley and serve with lemon wedges.
