Easy & Tasty Ham and Cheese Egg Cups

 

Ingredients (Makes 6–12 cups):

 

6–12 slices deli ham (thin but sturdy; black forest or honey ham works great)

 

6 large eggs

 

½ cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)

 

Salt & pepper, to taste

 

Optional add-ins:

 

Diced bell peppers, spinach, onions, or green onions

 

A pinch of paprika, chili flakes, or everything bagel seasoning

 

Instructions:

 

1. Preheat Oven:

 

Set to 375°F (190°C).

 

Grease a muffin tin or spray with nonstick spray.

 

2. Assemble Cups:

 

Line each muffin cup with a slice of ham, pressing it down to form a little bowl.

 

Sprinkle in a bit of shredded cheese.

 

Crack 1 egg into each ham cup (or whisk the eggs first if you prefer a scramble-style texture).
